Each night my goal is to record what my family has for dinner. It is more of a journal to be able to keep track of new recipes and meal ideas for when we are in rut with what to make for dinner.

Family Favorite...Tacos
Tonight's dinner was nothing special--just a family favorite that is easy, and we fall back on it frequently. Faith would prefer to have Tacos once, if not twice, a week. Faith and Greg prefer the ground beef tacos, Alicynn loves chicken tacos and I enjoy both types of meats. Every time I make tacos it seems I forget something, and tonight was no exception...I forgot to get lettuce.

Cheesy Chicken Ranch Lasagna

Tonight for dinner I decided to make a new meal that I found on Pinterest. According to my family (lately) any time I am making a new recipe, they ask, "Pinterest?" Well tonight, I made cheesy chicken ranch lasagna, and it was a hit. Everyone went for seconds. This recipe will be made again.

Ingredients
· 2 (12 oz) cans
evaporated milk
· 1 (1 oz) pkg. dry
Ranch dressing mix (not the dip blend)
· 3 Cup cubed, cooked
chicken
· 1 (16oz) lasagna
noodles, cooked (about 9 noodles)
· 1 1/2 - 2 Cups
cheddar cheese, grated
· 1 1/2 - 2 Cups
mozzarella cheese, grated
Directions
·
Combine
evaporated milk and Ranch dressing in a 3 quart heavy saucepan. Heat over low
heat, stirring frequently until dry ingredients are dissolved. Simmer,
uncovered, 25 minutes, stirring frequently.

Sauce
will thicken slightly.
·
Cook
lasagna noodles.
·
Layer
half of lasagna noodles, chicken, sauce, and cheese in well-greased 9×13 pan.
·
Repeat
layers again.
·
Bake
at 350 for 35-40 minutes or until hot and bubbly.
Let
rest 10 minutes before serving
